Kalen Fortuna

Executive Chef

A native of the Low Country, chef Kalen Fortuna joins the Blair Hill Inn team as Executive Chef of Slate Restaurant from the award-winning Peninsula Grill and Planters Inn, a Relais & Chateaux property. Chef Fortuna first knocked on the back doors of Peninsula Grill in 2005 as a young man in high school looking to dawn a chef jacket and begin his journey in hospitality. It was here that the standards of Relais & Chateaux were engraved in the young chef that would carry him throughout his career.

In 2009 Kalen packed up and moved to Key West, Florida where he reignited his passion for the ocean, its bounty and fine cuisine by joining the team of the renowned Little Palm Island. He quickly worked his way up through the ranks and spent the better part of a decade as Chef de Cuisine and Executive Chef for the island. After many years spent fishing, cooking and learning as much as he could, Hurricane Irma had other plans for the Florida Keys. After being a part of the amazing rebuild after the Hurricane, Kalen had the itch to head back to the mainland and continue his career heading up industry leading culinary teams.

We are excited for Chef Kalen to join our team and help us elevate the dining experience for our guests.

Chantel Carroll

General Manager

Chantel joined the Blair Hill Inn team in 2018 after holding restaurant leadership roles in restaurants in San Francisco, Montana and beyond. Her career in hospitality began with watching Julia Child as a kid, and she’s had a romance with food ever since.

Chantel graduated from Le Cordon Bleu western culinary institute in Portland, Oregon, with a degree in Management in Hospitality and Culinary Arts. Along her career path she developed a passion for wine, and spirits, and has passed the advanced test with the International Sommelier Guild. She is currently working on her Wine & Spirits Education Trust certification and aspires to become a Master of Wine.

Chantel is also passionate about traveling and aspires to see as much of the world as possible. Her travels help generate new ideas for food, wine, and service that she brings back to the guests of Slate Restaurant.
